The first sparkling wine made with 100% Albariño using the traditional champenoise method. It is saline in character and surprising thanks to its fine, elegant bubbles.

HARVEST

The clusters of Albariño from the Val do Salnés are meticulously hand-harvested into crates, bringing them straight from the vineyard to the bodega.

GRAPE SELECTION

The clusters are classified manually on our selection tables, and the best grapes are selected for processing.

FERMENTATION

Maceration of the grapes is carried out using the Ganimede method to extract all of its aromatic potential.

TRADITIONAL METHOD

A second fermentation takes place in bottles, thanks to the naturally occurring yeast and sugar. This generates the carbonic gas that will turn into fine bubbles.

AGEING ON RACKS

The wine is aged for one year in contact with the yeast inside the bottle.

DISGORGEMENT

Once the ageing on racks is complete, the neck of the bottle is frozen and cut in order to remove the yeast remaining on the inside. The expedition liqueur is then added to complete this sparkling wine.
